Colossal Crab Ceviche

RECIPE Ingredients
  • 8 oz. colossal crab meat
  • 2 Fresno red peppers, small dice
  • 1 serrano pepper, small dice
  • Handful of scallion curls (for garnish)
  • Juice of 1 ½ limes
  • A couple of sprigs of cilantro
  • ⅛ cup small dice red onion
  • Salt to taste
  • Extra lime wedges for garnish
  • Extra slices of Fresno and serrano peppers for garnish
  • Extra cilantro for garnish
  • Sturdy corn chips, we used MASA Chips

RECIPE Preparation

    Prepare Scallion Curls:

  1. This can be done in advance. Cut the greens of scallions into 3-inch segments and slice them super thin lengthwise.
  2. Place the slices in ice water. Let them sit in the ice water for a few hours until they firm up and curl. These will be used as a garnish.

    Prepare the Crab Mixture:

  1. In a mixing bowl, combine the colossal crab meat, diced Fresno red peppers, diced serrano pepper, diced red onion, and finely chopped cilantro.
  2. Squeeze the juice of 1 ½ limes over the mixture.
  3. Season with salt to taste.
  4. Gently toss everything together until well combined. Be careful not to break up the crab meat too much.

    To Serve:

  1. Place the crab ceviche mixture into margarita or coupe glasses for an elegant presentation.
  2. Garnish each glass with extra lime wedges, slices of Fresno and serrano peppers, extra cilantro leaves, and the prepared scallion curls.
  3. Serve the crab ceviche glasses alongside the corn chips for scooping.
