- Kosher salt & freshly ground black pepper
- 3 tablespoons unsalted butter
- 3 tablespoons hot honey
- 1 small chunk of smoking wood, such as applewood or post oak (optional)
Recipe notes
This simple pasta recipe is perfect for a weeknight dinner. Use your favorite pasta, or pasta made with spinach, carrot and beet to bring extra color to the dish and complement the salmon and bright green English peas.
RECIPE Preparation
- Prepare a charcoal grill for indirect cooking or heat a gas or pellet grill to 450 degrees F. Add smoking wood directly to the charcoal, if using.
- Line a small baking sheet with parchment paper. Season salmon fillets with salt and pepper on both sides and place at least 2 inches apart on the sheet pan.
- In a small saucepan, melt butter. Remove from the grill, stir in honey until evenly combined. Brush the salmon with the honey butter mixture and place on the grill over indirect heat and cover.
- Cook, brushing occasionally with more honey mixture, until salmon is just cooked through and flakes easily with a fork, about 15-20 minutes.
- Remove pan from the grill and rest for 5 minutes before serving with your favorite grilled vegetables.
Notes: This is a great base recipe and can be adapted to suit your taste – subbing plain honey or adding your favorite spice rub are good places to start.
