Babe Sewall’s Lobster Roll

Our featured ‘pescatarian’ recipe today is from Jeremy Sewall’s (chef at Boston seafood restaurant “Row 34”) grandmother, Ethel “Babe” Sewall. From a marriage to a lobsterman for over 50 years, she’s had quite a long history of cooking lobsters! Babe Sewall’s Lobster Roll is a lobster roll in the classic form of the sandwich: mayonnaise-accented lobster with celery and diced pickles for an added distinctive crunch.

There are so many different types of lobster rolls out there, each one with its own character and creamy, chunky texture of lobster. And no one can ever eat just one lobster roll, as they’re just the right size for a few delicious bites and so tasty with sweet thick chunks of lobster meat that you’re ready to bite into another one!

Sometimes with all the choices out there for lobster rolls, if you’re not on the outskirts of Maine where you can get lobster roll perfection, making your own lobster rolls at home is the next best thing. And when it comes to lobster rolls, there are two schools of thought on the best recipes to make them: a mayonnaise-celery based recipe, and a drawn-butter recipe. The drawn-butter recipe features lobster tossed in a melted tarragon-lemon butter, and for the other variety, the classic mayonnaise-celery kind that’s featured today!  

Homemade New England Lobster Roll with Lemons

INGREDIENTS:

  • 2 1 ¼-pound lobsters, steamed
  • ¼ cup pickles, diced small
  • ¼ cup celery, diced small
  • 1 teaspoon celery salt
  • 1 teaspoon white pepper
  • ½ cup mayonnaise
  • 4 hot dog buns
  • 3 tablespoons butter
  • 1 tablespoon lemon juice
  • 1 tablespoon kosher salt

INSTRUCTIONS:

  1. Remove all meat from the lobster and dice into medium size pieces.
  2. In a large bowl, mix the mayonnaise, pickles, celery, lemon juice, celery salt, kosher salt, and pepper, then gently fold in the lobster meat. Set aside.
  3. In a non-stick pan or on a griddle, melt the butter. Lightly toast the hot dog buns on both sides. Fill the buns with lobster salad and serve immediately.

So as you can see, enjoying seafood ‘pescatarian’ style is really in style, delicious, and beneficial to you from a health standpoint—and from an environmental standpoint as well. As lobster rolls go, you probably couldn’t ask a more fail-proof recipe to try.
