Baja Garlic Shrimp
Make your outdoor summer soiree a sizzling sensation with a shrimp dish that’s fun, festive, and full of zesty, garlic flavor. Baja Garlic Shrimp is the kind of meal that’s fun to make for just about any celebration that involves family and friends gathering together. While the name reminds you of something from a menu that you might see served at a seaside resort (and it’s quite likely you would, given that it’s from Baja which is a very nice tropical destination!), it’s really a delicious, family-style meal that can be served on special occasions—especially holidays.
Served over rice, the garlic and onion mixture combined with the white wine and lime juice adds a tapestry of flavor textures to the shrimp making the shrimp burst with succulent, juicy flavor when it’s all mixed together. Yield: 6
INGREDIENTS:
2 tablespoons butter
1 pound medium shrimp, peeled and deveined, tail on
Salt and freshly ground black pepper
¼ cup minced onion
8 garlic cloves, minced
3 tablespoons white wine
1 tablespoon fresh lime juice
2 tablespoons chopped fresh parsley leaves
Serving suggestion: cooked white rice
DIRECTIONS:
Melt the butter in a heavy medium skillet over medium heat. Season the shrimp with salt and pepper, to taste.
Cook for about 4 minutes until almost fully cooked. Using a slotted spoon, transfer the shrimp to a plate and tent it with foil. Add the onion and garlic and cook until the onion is translucent, about 6 minutes. Stir in the wine and bring to boil, scraping up the brown bits on the bottom of the pan. Boil for 1 minute. Stir in the lime juice and parsley. Return the shrimp to the pan and toss to coat with sauce.
Continue to cook until the shrimp are fully cooked, about 1 minute. Season with salt and pepper, to taste. Transfer the shrimp to a serving platter and serve alone or with white rice, if desired.
A dish named after a geographical region, Baja Garlic Shrimp is a culinary creation from the northwest Mexico state of Baja California Sur, on the Baja California Peninsula. Most familiar to the U.S. population and residents of the southwest United States is Tijuana, which is the westernmost city in Mexico and separated from the mainland of Mexico by the Gulf of California. Tijuana is rapidly becoming suburbanized like it’s U.S. neighbor, San Diego, and is the largest city in the Mexican state of Baja.
You’ve probably heard of La Paz, which is the state capital. Two of the major attractions in La Paz is the Whale Museum and the promenade overlooking the Gulf of California.
Other famous areas along the Baja Peninsula are the famous twin resorts of Los Cabos: Cabo San Lucas, and San José del Cabo city. The beaches and nightlife are legendary hallmarks of Cabo San Lucas, while colorful colonial architecture sets San José del Cabo city apart.
