CRANKY LOBSTER
Compliments of Chicago-based Lush Wine and Spirits, we can't wait to try their new Cranky Lobster Recipe just in time for National Lobster Day on June 15!
The Cranky Lobster features fresh sourdough toast topped with lobster knuckles and green onion sprouts which are doused in a spicy Calabrian chili-white soy sauce-buttery garlic sauce combination.
Ingredients:
- 4 oz lobster meat (lump/claw)
- 4 oz unsalted butter
- 2 oz minced garlic
- 1 oz minced Calabrian chilies
- 1/2 lemon
- 1/2 oz white or low salt soy sauce
- 1 large slice sturdy whole grain bread, toasted
- Micro shisho and micro scallions for garnish
Directions:
Melt butter in a pan over medium heat. Add garlic and chilies and saute for 2 minutes. Add lobster meat and squeeze 1/2 fresh lemon into mixture cook for 2 to 3 minutes until lobster is rosy and firm. Carefully spoon lobster meat onto toasted bread and then pour remaining butter around the bread to create a pool. Drizzle soy over lobster meat.
Lush uses lovely hydroponically-grown micro greens for garnish, but if you can’t find those, finely chopped parsley or scallion tops will do nicely.
