Grilled Maine Lobster with Ginger-Citrus and Scallions

Ingredients:
For Maine Lobster
- 2 whole Maine Lobster cut lengthwise
- 1 bunch scallion, cut 2 inches long
- Parsley leaves
For ginger-citrus sauce
- 1 tsp. sesame oil
- 2 tbls. chopped ginger
- juice from 2 lemons
- ½ cup water
- ¼ cup unsweetened rice wine vinegar
- ¼ cup soy sauce
- ½ cup oyster sauce
- Black pepper to taste
Directions:
Preheat grill to 400 degrees.
Place whole lobster on a sturdy cutting board. Apply slight pressure to your knife and cut lobster in half lengthwise.
Rinse cavity.
Season with salt and pepper. Lightly coat lobster with ginger-citrus sauce and allow to sit for 30 minutes.
Place lobster halves shell side down and cook for 5 minutes while basting with sauce.
Close lid and allow to cook for another 12 minutes.
Gently uncover grill to find bright red hued lobster. Slowly turn over, and allow to mark flesh meat, about 2 minutes.
Remove from grill. Garnish with sliced scallions, parsley, and remaining sauce .
