A staple of Italian and French kitchens, rabbit meat is a rarer pleasure in the U.S. Our rabbit comes from Italy where third-generation farmers remain dedicated to traditional methods. The rabbits are fed a clean diet of sweet alfalfa grasses, oats, wheat, and barley; their consistent and regulated diet produces unadulterated rabbit, with no traces of antibiotics, hormones or other chemicals. Rabbit offers more protein and less fat than both beef and chicken and requires fewer resources to bring it to market. This makes it among the most environmentally friendly meats available, as well as the ultimate healthy meat. Our Italian rabbit program includes expertly butchered parts based on three generations of rabbit raising tradition.

The farm raises Californian White and New Zealand White breeds known for exceptional genetics, producing sweet and tender meat with this delicious crossbreed.
