This innovative cask-finished Arbequina extra virgin olive oil is produced by the award-winning Castillo de Canena, a family-owned business that takes its name from the castle nestled in the hills of their township in the south of Spain. The family olive producing history dates to 1780, and today they harvest only the highest quality olives. To make this special olive oil, they collaborated with Lustau, a renowned Spanish sherry producer, who provided 50-year-old oak sherry casks. The barrels impart notes of toasted nuts, ripe fruit, mushrooms and a delicate hint of sherry to the young Arbequina olive oil. This premium olive oil deserves a place in every kitchen. Drizzle it over grilled fish, shellfish, pork, cheeses, and desserts, pair with clams, cockles, and oysters, fried almonds, sautéed mushrooms, and tuna tartare.
