The halibut fillets make an easy dinner when roasted on a sheet pan, and the shrimp, scallops, octopus, and calamari are great in a cold insalata de mare. The raw calamari are cleaned and trimmed, and ready to cook, with 4–6-inch tubes that are perfect for stuffing or grilling whole. Or slice into rings and sauté along with the one-bite tentacles, and finish with garlic and tomato sauce. Try a bisque soup with crab meat on top, lobster tails stuffed with crab meat, lobster mac and cheese, shrimp cocktail, or shrimp scampi. Serve the lobster tails with steak for a surf and turf party.
