Trimmed from the ends of the tenderloin, these Angus beef tips have all the great flavor and texture of a filet mignon steak. We won’t waste any part of the cattle, let alone these tender treasures. This lean and convenient cut is ideal for quick meals and can be enjoyed as small-portion steaks, stir fry or kebabs, tapas, appetizers, and on top of salads. To make the most of the flavor, cook this beef to rare or medium rare, as you would a filet mignon. Please note that the tips vary in size and shape.

Cooking Methods: Pan-Sear, Pan-Roast, Grill, Broil, Sous Vide

Cooking Tips: Simply season with coarse salt and pepper or wrap with a strip of Applewood Smoked Bacon before cooking. Filet mignon is best served rare to medium-rare (130-145 degrees F). Sear quickly over high, direct heat then lower and continue to cook to desired temperature. Top hot steak with Black Truffle Butter, or make a quick pan-sauce with red wine and our Veal Demi-Glace.

Our marbled and flavorful Angus beef comes from cattle raised exclusively for D’Artagnan by a cooperative of ranchers committed to strict protocols of humane animal husbandry.

The Black Angus cattle range over pasture land for most of their lives, and then get a supplement of alfalfa hay, barley and corn for a few months in a spacious, dry, low-stress feeding facility, before processing at about 18-22 months of age. The vegetarian feed is supplemented with vitamin E and A which strengthen natural immunities.

The ranchers take every care, even in transporting the cattle short distances. They know exactly where each animal comes from, and can track them from birth to processing. Each cattle comes with an affidavit to prove that the rancher followed the strict protocols of the cooperative.
