One of the most sought-after breeds of venison for restaurants, fallow deer is so exclusive our farmers only grow 200 per season. It’s a rare treat to be able to offer some to you. A much smaller variety than red deer, fallow venison has finely grained flesh with a mild, delicate flavor that’s got a natural sweetness and is never gamey.

For Fallow NY striploins, which are about 10 oz each, a quick, high-heat sear with just salt, pepper, and neutral oil is recommended. Due to the low fat content, maintain a rare to medium-rare temperature for optimal tenderness and juiciness. Pair with roasted root vegetables or sautéed bitter greens like kale to highlight the natural sweetness of the venison.

As free-range as it gets without being wild, our venison comes from a group of New Zealand ranchers who allow the Fallow deer to roam and feed on tall-grass pastures in a pristine environment, in accordance with the strict standards required by the Cervena name.

Cervena is a quality assurance program that certifies that all the venison with their label has been humanely pasture-raised, and 100% grass-fed with only minimal supplemental feed such as hay. Only in cases of extreme disease will antibiotics be administered, and then the animal is tracked and processed separately.

Cervena also requires that animals be less than three years of age at the time of processing, which takes place only at accredited facilities expert in processing deer, and specifically licensed and regularly audited by an independent agency.
