Good things come in small shells. Quail eggs are a fraction the size of chicken eggs but pack more nutrients and minerals. They have a larger yolk-to-white ratio than chicken eggs, and some consider them more delicious. Quail eggs are enjoyed in many cuisines around the world, and are perfect for hors d'oeuvres, canapes, and garnishes. Try them hard-boiled, cut in half, then topped with crème fraîche and a dollop of caviar; add protein to salads; pickle them in vinegar and beet juice for a dramatic flourish.

Cooking Methods: Pan-Fry, Boil, Poach

Cooking Tips: Because they are so small and have a dense membrane inside, use small scissors or a sharp paring knife to shear off the narrow end of the raw egg. 

Boiling times: 2 1/2 minutes = soft-boiled egg | 3 minutes = medium-boiled egg | 4 minutes = fully hard-boiled egg. 

Peeling hard-boiled quail eggs can be tricky. Start at the bottom, round end, and try to get through the shell and membrane, then peel both off together. It can come off all in one spiral peel, but go slowly to protect the egg within. 

Safe handling instructions: To prevent illness from bacteria, keep quail eggs refrigerated, cook eggs until yolks are firm, and cook foods containing quail eggs thoroughly.

Our quail comes from a family-owned Texas farm that manages the entire process from hatching to packing. They raise Coturnix quail with superior genetics for increased meat-to-bone ratio, and lighter-colored meat and skin. The Coturnix breed of this delicate little game bird offers richer flavor and higher moisture content than the more common Bobwhite breed. 

The farm places great emphasis on humane and stress-free conditions for the quail, raising them in spacious, open barns with a wholesome cereal diet. There are never any hormones, growth stimulants, or antibiotics used.
