Never soaked or treated, our 100% natural scallops offer fresh sea flavor and nearly translucent meat with a creamy appearance. The flavor is sweet, ranging from mild to salty, with delicate yet firm texture, and when cooked should have a seaweed-like scent. Because the scallops are never treated with tripolyphosphate, they have a variety of natural colors with pink and orange hues. This additive is commonly used to soak scallops, which adds water weight, and makes them appear firmer and paler in color. Many “dry” scallops are soaked in undisclosed amounts of the chemical but ours are truly dry and never treated. Our sea scallop fishery is fully sustainable and harvested from the Canada border using the New Bedford Style Dredge, a type of trawl fishing that is designed to reduce bycatch. With video surveys of the sea floor and satellite monitoring of the vessels, this is state-of-the-art fishing.
